The Inner Chef in Me
I've been watching the Final Table lately and was very motivated to cook. This is a very simple dish put together. I found the recipe on The Roasting Tin book i just add a little twist.
- Preheat the oven to 180 C fan. Place the asparagus in the baking tray ( have few pieces of baby potatoes that i also used in this dish). Sprinkle over salt, pepper, oil. Toss well to mix.
- Place the seasoned salmon fillet into the baking tray along with the asparagus. Cover with foil and bake for 20-25mins until the Salmon is cook through to your liking.
- Meanwhile mix together ginger, chilli, fish sauce, oil, coriander, lime zest and juices. Recommended to put peanuts for a richer texture. Taste and adjust as you wish.
- Remove the salmon and generously coat with the dressing.
